Ingredients
- 14 oz Extra-firm tofu
- 1 cup Heavy cream
- 1/2 cup Sun-dried tomatoes
- 3 cups Baby spinach
- 1/2 cup Parmesan
- 4 cloves Garlic
- 1 tsp Italian seasoning
- 2 tbsp Olive oil
Steps
- Press the tofu 10 minutes between kitchen towels with a heavy pan on top — dry tofu crisps; wet tofu steams.
- Cut into 1-inch cubes and sear in the olive oil over medium-high heat, turning, about 8 minutes, until golden on most sides.
- Push the tofu to the edges; soften the minced garlic and sun-dried tomatoes in the center 1 minute.
- Pour in the cream and simmer 3 minutes, until slightly thickened.
- Whisk in the parmesan and Italian seasoning until the sauce is completely smooth.
- Fold in the spinach and stir 1 minute, just until wilted.
- Rest 3 minutes off the heat — the sauce thickens noticeably as it stands.
