Ingredients
- 1.5 lb Shrimp
- 1 lb Asparagus
- 5 tbsp Butter
- 5 cloves Garlic
- 1 Lemon
- 1/2 tsp Red pepper flakes
- 2 tbsp Parsley
Steps
- Snap the woody ends off the asparagus — each spear breaks naturally where the tender part begins.
- Sear the asparagus in olive oil over high heat, 4 minutes, until charred in spots but still snappy; set aside.
- Melt the butter in the same skillet; add the minced garlic and pepper flakes and cook 30 seconds, until fragrant but not brown.
- Add the shrimp in a single layer and sear 90 seconds per side, until pink and curled into C shapes — tight O shapes mean overcooked.
- Return the asparagus to the pan and toss 1 minute in the garlic butter.
- Squeeze the lemon over everything and shower with chopped parsley.
- Serve immediately — shrimp seize up and turn rubbery if they sit.
