- 2 Potatoes

- 3 tbsp Gochujang
- 1 tbsp Gochugaru
- 1/4 cup Soy sauce
- 5 cloves Garlic
- 1 tbsp Grated ginger
- 3 Scallions
Steps
- Whisk the gochujang, gochugaru, soy sauce, garlic, and ginger with 1 cup of water into a sauce.
- Toss the chicken pieces in the sauce in a heavy pot, add 2 more cups of water, and bring to a boil.
- Add the potatoes, carrots, and onion; reduce to a simmer and cook 30 minutes, turning the chicken once.
- Uncover and simmer 10 more minutes until the sauce reduces and clings to everything in a spicy glaze.
- Scatter scallions over the top and serve with rice — the potatoes, having drunk up the sauce, may be the best part.
