Ingredients
- 1/2 block Firm tofu
- 3/4 cup cooked Brown rice
- 1/2 cup Edamame
- 2 tbsp Peanut sauce
- 1 tsp Sesame seeds
Steps
- Cut the tofu into 1/2-inch cubes, then press them between paper towels or a clean kitchen towel for 5 minutes — getting the water out is the secret to crispy tofu.
- Heat a tablespoon of oil in a large skillet over medium-high heat until it shimmers, then arrange the tofu cubes in a single layer without crowding.
- Sear 4-5 minutes until the bottoms are deeply golden and crisp, then flip and crisp a second side for 3-4 minutes. Season with salt as they cook.
- While the tofu sears, warm the brown rice and edamame together in the microwave for 1-2 minutes.
- Divide the rice and edamame between two bowls, arrange the crispy tofu on top, and drizzle each bowl with a tablespoon of peanut sauce.
- Scatter the sesame seeds over everything and serve — add extra peanut sauce at the table if you like it saucy.
