Ingredients
- 1.5 cups Day-old cooked rice
- 4 oz Chicken breast
- 1.5 tbsp Kecap manis
- 1 Fried egg
- 1/4 Cucumber
- 1 Shallot
Steps
- Use day-old refrigerated rice — fresh rice turns gummy in the wok.
- Fry the egg in a hot oiled wok until the edges crisp and the yolk is just set; set aside.
- Sear the diced chicken and sliced shallot over the highest heat, 4–5 minutes.
- Add the rice, breaking up every clump with your spatula.
- Pour the kecap manis around the hot wok edges so it caramelizes on contact; toss everything 2–3 minutes.
- The rice should be smoky with crispy bits here and there.
- Serve topped with the fried egg and cucumber slices.
