Ingredients
- 6 oz Beef chuck
- 1 tbsp Massaman paste
- 3/4 cup Coconut milk
- 1 cup Potatoes
- 2 tbsp Peanuts
- 1 tsp Fish sauce
Steps
- Cut the beef into chunks and pat dry. Scoop the thick cream from the top of the coconut milk into a Dutch oven over medium heat and fry the massaman paste in it for 2-3 minutes, until deeply fragrant and brick-colored.
- Add the beef and stir to coat, then pour in the remaining coconut milk plus 1/2 cup of water. Bring to a gentle simmer.
- Cover and braise 30-35 minutes, stirring occasionally, until the beef is nearly fork-tender.
- Add the potatoes and simmer uncovered 12-15 minutes more, until the potatoes are tender and the sauce has thickened to a spoon-coating gravy.
- Stir in the fish sauce, then taste. Add a touch more fish sauce or salt until the flavor sings.
- Serve in warm bowls, scattered with the chopped peanuts.
