Ingredients
- 3 cups Flour
- 1 lb Ground lamb
- 1 Onion
- 1/3 cup Pine nuts
- 1 tbsp Baharat
- 1/3 cup Olive oil
- 1/4 cup Yogurt
Steps
- Knead the flour, oil, yogurt, and salt into a smooth, elastic dough; rest 30 minutes.
- Brown the lamb with onion and baharat until crumbly and dry; fold in the toasted pine nuts and cool completely.
- Roll the dough thin and cut into 4-inch rounds.
- Fill each with a tablespoon of meat, fold into half-moons, and crimp the edges firmly with a fork — a loose seal bursts in the fryer.
- Fry at 350°F for 4 minutes until golden and blistered; drain on a rack.
- Alternatively, brush with oil and bake at 400°F for 20 minutes for a lighter version.
- Serve hot with yogurt-mint dip; sambousek are the Levant’s answer to every celebration’s first bite.
