Ingredients
- 4 cups Flour
- 1.75 cups Water
- 2.25 tsp Instant yeast
- 2 tbsp Sugar
- 1.5 tsp Salt
- 3 cups Vegetable oil
Steps
- Mix everything except the frying oil into a very wet, sticky dough — wetter than you think it should be. Knead or slap it for 10 minutes until smooth and elastic.
- Rise 1 hour until doubled and bubbly. The dough will still be sticky; that is correct and essential for the chewy texture.
- Heat the oil to 350°F. With well-oiled hands, pull off a piece of dough, poke a hole through the middle, and stretch it into a rough ring. Imperfect rings are traditional.
- Fry 2 to 3 minutes per side, until deep golden and puffed. They should bob and turn almost by themselves.
- Drain on a rack and dust with sugar while hot, or serve plain the street-vendor way.
