  1. Bring 4 cups of water to a rolling boil, then steep the Thai tea mix for 5 minutes. Thai tea mix already contains sugar and spices. The deep orange color and vanilla-like aroma are the tell that you have the right stuff.
  2. Strain through a fine-mesh sieve, pressing the leaves to extract every drop of color and flavor. Stir in the sugar while the tea is still hot so it dissolves completely.
  3. Stir in the sweetened condensed milk until smooth, then the evaporated milk. Taste. Cha yen should be sweet, creamy, and bold enough to stand up to a glass full of ice.
  4. Fill tall glasses to the brim with ice and pour the tea over. Watch it cascade. The color gradient as the tea hits the ice is half the pleasure.
  5. Serve with a straw and drink immediately. The ice dilutes as you sip, which is exactly how it is meant to be. The last sips are the mellowest.
