Ingredients
- 18 Corn tortillas
- 3 cups Shredded chicken
- 1.5 lb Tomatillos
- 2 Poblano chiles
- 1 Jalapeño
- 1/2 White onion
- 1 cup Crema
- 2 cups Manchego or Oaxaca cheese
- 1 cup Chicken broth
- 1/4 cup Vegetable oil
Steps
- Char the tomatillos, poblanos, and jalapeño, then blend with onion, garlic, and broth into a smooth green sauce. Simmer 10 minutes.
- Stir half the crema into the sauce off the heat — the Swiss-style creamy finish.
- Flash-fry each tortilla in hot oil 10 seconds per side so they roll without cracking, then drain.
- Fill with chicken, roll snugly, and line up seam-down in a baking dish.
- Drown in the green sauce and blanket with cheese.
- Bake at 400°F for 20 minutes until bubbling and browned. Drizzle with the remaining crema and serve.
