Ingredients
- 4 slices Bacon
- 4 leaves Romaine hearts
- 1/2 Tomato
- 1/2 Avocado
- 1 tbsp Mayo
Steps
- Lay the bacon in a single layer in a large cold skillet, then set it over medium heat; cook for 8-10 minutes, turning occasionally, until crisp and deeply browned — starting cold renders the fat evenly so the bacon crisps instead of curling.
- Transfer the bacon to a paper-towel-lined plate to drain.
- Dice the tomato and slice the avocado; keep the romaine leaves whole and cold — cold, crisp leaves hold fillings much better than warm, limp ones.
- Spread a thin layer of mayo on the inside of each romaine leaf.
- Fill each leaf with the crisp bacon, diced tomato, and avocado slices.
- Season with salt and pepper and serve right away.
- Tip: build the wraps just before eating — once filled, the lettuce softens within minutes.
