Ingredients
- 1 cup Water
- 1/2 cup Butter
- 1 cup All-purpose flour
- 4 Eggs
- 2 cups Milk
- 3/4 cup Sugar
- 1 pack Vanilla pudding
- 1/4 cup Powdered sugar
Steps
- Boil the water with butter, dump in the flour, and stir until the dough pulls away — classic choux.
- Beat in the eggs one at a time until glossy; the batter should be thick and smooth.
- Spread in two uneven layers on baking sheets; the craggier, the more mountain-like.
- Bake at 400 degrees 25 minutes until puffed and golden; cool completely.
- Cook the pudding with milk and sugar until thick; cool, then whip with butter into a silky cream.
- Sandwich the cream between the choux layers; dust with powdered sugar like snow on peaks.
