Ingredients
- 3/4 lb Cod (salted, soaked)
- 1 lb Potatoes
- 3 Eggs
- 1/2 Onion
- 1/4 cup Parsley
- 4 cups Vegetable oil
- 1/4 tsp Nutmeg
Steps
- Desalt the cod, then simmer 8 minutes; flake fine, removing every bone.
- Boil the potatoes until very tender and mash completely smooth — lumps make fritters fall apart.
- Mix the cod, potato, beaten eggs, minced onion, parsley, and nutmeg into a firm paste; season well.
- Shape into quenelles with two spoons dipped in water; the classic teardrop comes with practice.
- Fry in 350-degree oil 3 minutes until deeply golden, turning once.
- Drain on a rack and serve hot; the centers should be creamy, the crusts crisp.
