Kulebyaka (Salmon Pie)
This is the kind of Russian dinner you’ll make on repeat — puff pastry and salmon fillets, 90 minutes, big payoff. It is weeknight cooking that still hits your targets — 36 grams of protein per serving. It scales cleanly if you are cooking for more than one.

Ingredients
- 1 lb Puff pastry
- 1.5 lb Salmon fillets
- 1 cup Rice
- 3 Eggs
- 8 oz Mushrooms
- 1 Onion
- 3 tbsp Butter
- 1/4 cup Dill
Steps
- Cook the rice until just tender and hard-boil the eggs; cool both so they do not melt the pastry on contact.
- Saute the onion and mushrooms in butter until golden and all their liquid has cooked away — a wet filling makes a soggy bottom.
- Roll the pastry into a large rectangle on a floured surface and layer rice, chopped eggs, mushrooms, and salmon down the center.
- Season the salmon well, shower with dill, and fold the pastry over into a sealed loaf, crimping the edges.
- Cut a few steam vents, brush with beaten egg, and bake at 400 degrees 30 minutes until deeply golden.
- Rest 10 minutes before slicing — the filling sets as it cools and cuts cleanly.
