Ingredients
- 1 lb Mixed mushrooms
- 1 oz Dried porcini
- 2 Potatoes
- 1 Onion
- 1 Carrots
- 2 tbsp Butter
- 1/2 cup Sour cream
- 2 tbsp Dill
Steps
- Soak the porcini in hot water 20 minutes; strain and save every drop of the dark, fragrant liquid.
- Sear the fresh mushrooms in butter until deeply browned; add onion and carrot and soften 5 minutes.
- Pour in the porcini liquid plus 6 cups of water and the chopped porcini; simmer 15 minutes.
- Add cubed potatoes and cook 12 minutes until tender; the starch lightly thickens the broth.
- Season with salt and black pepper; the soup should taste intensely of forest floor, in the best way.
- Serve with a swirl of sour cream and dill; a slice of dark bread is mandatory.
