Ingredients
- 1.5 lb Chicken pieces
- 2.5 cups dry Long-grain rice
- 1 can Coconut milk
- 1 can Black-eyed peas
- 60 g Callaloo (or spinach)
- 1 Yellow onion
- 4 cloves Garlic
- 1 tsp Fresh thyme
- 3 tbsp Vegetable oil
Steps
- Brown the seasoned chicken in hot oil until golden on all sides. Set aside.
- Soften the onion, garlic, and thyme in the same pot, then stir in the rice to coat in the flavorful fat.
- Add the coconut milk, 2 cups water, black-eyed peas, and the chicken. Bring to a boil, cover, and cook on low 20 minutes.
- Fold in the chopped callaloo, cover, and cook 5 minutes more until the greens wilt into the rice.
