Bird Milk Cake
Sponge cake layer does the heavy lifting here, with sugar rounding it out. A Russian snack that takes 120 minutes, start to finish. It is weeknight cooking that still hits your targets — 6 grams of protein per serving. Naturally vegetarian, it scales cleanly if you are cooking for more than one.

Ingredients
- 1 Sponge cake layer
- 1.5 cups Sugar
- 2 tbsp Gelatin
- 4 Egg whites
- 3/4 cup Butter
- 1/2 cup Condensed milk
- 7 oz Dark chocolate
- 1 tsp Vanilla
Steps
- Bake a thin sponge in a springform and cool completely; this is the foundation.
- Bloom the gelatin in cold water; heat sugar with a little water to a light syrup and dissolve the gelatin in it.
- Whip the egg whites to stiff peaks, streaming in the hot syrup — the meringue should turn glossy and marshmallowy.
- Beat in the softened butter, condensed milk, and vanilla; fold into the meringue for a cloud-light mousse.
- Spread over the sponge and chill 4 hours until firmly set.
- Pour over melted chocolate, chill 30 minutes more, and slice with a hot knife for clean layers.
