Ingredients
- 3 cups All-purpose flour
- 1 Eggs
- 3/4 cup Water
- 1 lb Cherries
- 1/2 cup Sugar
- 2 tbsp Butter
- 1/2 cup Sour cream
Steps
- Knead a soft dough and rest 30 minutes; tender dough means tender vareniki.
- Pit the cherries and toss with sugar; let them macerate 15 minutes into a ruby syrup.
- Roll the dough thin, cut rounds, and place 3 cherries on each; seal firmly, pressing out air.
- Boil in batches until they float plus 2 minutes; the skins turn jewel-like and translucent.
- Toss gently with melted butter so they do not stick.
- Serve warm with sour cream and a spoonful of the cherry syrup.
