Pozharsky Cutlets
This is the kind of Russian dinner you’ll make on repeat — ground chicken and white bread, 45 minutes, big payoff. It is weeknight cooking that still hits your targets — 37 grams of protein per serving. It scales cleanly if you are cooking for more than one.

Ingredients
- 1.5 lb Ground chicken
- 3 slices White bread
- 1/3 cup Milk
- 1/2 cup Butter
- 1 Eggs
- 1 cup Breadcrumbs
- 1/4 cup Cream
Steps
- Soak the bread in milk, squeeze dry, and mix with the chicken, egg, cream, salt, and pepper — the mixture will be soft.
- Chill 20 minutes so the patties hold their shape in the pan.
- Form oval cutlets with wet hands and roll in fine breadcrumbs, pressing firmly.
- Fry in foaming butter 4 minutes per side until deeply golden; the butter should smell nutty, not burnt.
- Finish in a 350-degree oven 8 minutes; the centers should be just cooked and juicy.
- Serve with mashed potatoes and pour over a spoonful of the browned butter.
