Banana Peanut Sushi Rolls
Large flour tortilla does the heavy lifting here, with peanut butter rounding it out. An American snack that takes 10 minutes, start to finish. It is weeknight cooking that still hits your targets — 14 grams of protein per serving. Simple enough for a Tuesday, good enough to serve to guests — that is the whole idea.

Ingredients
- 1 Large flour tortilla
- 2 tbsp Peanut butter
- 1 Banana
- 1/2 tsp Cinnamon
Steps
- Lay the tortilla flat on a clean cutting board. If it feels stiff from the fridge, microwave it for 10 seconds so it rolls without cracking.
- Spread the peanut butter edge to edge in an even layer about 1/8 inch thick, leaving a 1/2-inch border along the far edge clean so the roll seals shut.
- Dust the cinnamon evenly over the peanut butter.
- Peel the banana and lay it whole along the edge nearest you.
- Roll the tortilla away from you, tucking tightly as you go. Beginner tip: tuck the near edge up and under the banana first, then keep rolling, a snug roll won’t unspiral when sliced.
- Place the roll seam-side down and slice into 8 equal rounds with a sharp knife, wiping the blade between cuts for clean edges.
- Arrange cut-side up on a plate and serve immediately, before the banana has a chance to brown.
