  1. Cut 1 avocado and 1/2 cucumber into long strips about the length of your pinky finger.
  2. Cut 2 nori sheets in half crosswise to make 4 smaller sheets. Hand rolls use halves, not full sheets -- a full sheet is too unwieldy to roll into a cone.
  3. Hold a nori half in your palm, shiny-side down, with one corner pointing down like a diamond.
  4. Lay a few avocado and cucumber strips diagonally across the middle of the nori. Do not overfill, or the cone will not close.
  5. Roll into a cone: bring one bottom corner up and over the filling, then roll the nori around it, tucking the filling in as you go.
  6. Dab the seam with a drop of water to seal it shut. Repeat with the remaining nori sheets.
  7. Serve immediately -- hand rolls go soft fast. Dip in 1 tsp soy sauce alongside 1 tbsp pickled ginger.
