Fava Dip with Pita

Ingredients
- 1 can Fava beans
- 2 tbsp Tahini
- 1/2 Lemon
- 2 tbsp Olive oil
- 1 Pita
Steps
- Drain and rinse the fava beans under cold water.
- Add them to a food processor with the tahini, lemon juice, and 1/4 cup of water.
- Blend for 2 full minutes, scraping down the sides once. Fava needs longer than you{Q}d think to go silky, be patient.
- With the processor running, drizzle in the olive oil until the dip is glossy.
- Season boldly with salt and more lemon juice, then taste. Bland fava dip is a tragedy, it should taste bright and nutty.
- Warm the pita in a 350°F oven for 5 minutes, or in a dry skillet 30 seconds per side.
- Swirl the dip into a serving bowl, make a small well on top with the back of a spoon, fill it with olive oil, and serve with the warm pita.
