Ingredients
- 1 can Butter beans
- 1 cup Crushed tomato
- 1 tsp Oregano
- 2 tbsp Olive oil
Steps
- Drain and rinse the butter beans under cold water.
- Warm the olive oil in a medium saucepan over medium heat. Add a thinly sliced garlic clove and soften for 1 minute, don{Q}t let it brown or it turns bitter.
- Add the crushed tomato, oregano, a pinch of sugar to balance the acidity, and 1/2 teaspoon of salt. Simmer 10 minutes, until slightly thickened.
- Stir in the drained beans and simmer 10 more minutes, until the beans are creamy and the sauce clings to them.
- Taste and season assertively with salt and pepper. Beans need bold seasoning or they taste flat.
- Let rest 5 minutes off the heat. The sauce thickens as it cools slightly.
- Beginner tip: these taste even better the next day, after the beans absorb the sauce. Serve warm in bowls with crusty bread for scooping.
