Kung Ob Woon Sen (Clay-Pot Prawns with Glass Noodles)

Ingredients
- 1 lb Large prawns
- 4 oz Glass noodles
- 3 slices Fresh ginger
- 2 stalks Celery
- 2 tbsp Oyster sauce
- 2 tbsp Soy sauce
- 1 tbsp Sesame oil
- 1 tsp White pepper
- 1 cup Chicken broth
Steps
- Soak the glass noodles in warm water for 10 minutes until soft, then drain. Toss them with the oyster sauce, soy sauce, sesame oil, and white pepper so every strand is seasoned before it ever meets the heat.
- Line a clay pot or heavy Dutch oven with the ginger slices and celery stalks. They protect the noodles from scorching and perfume everything as they cook.
- Pile the seasoned noodles over the aromatics, arrange the prawns on top, and pour in the chicken broth. Cover with a tight lid.
- Cook over medium heat for 12 to 15 minutes, until the prawns are pink and curled and the noodles have absorbed the broth. Resist lifting the lid for the first 10 minutes. The steam is doing the work.
- Serve straight from the pot at the table. The grand unveiling, with the steam rolling out, is half the pleasure of this dish.
