Ingredients
- 1.5 lb Chicken
- 3 tbsp Olive oil
- 3 tbsp Lemon juice
- 4 cloves Garlic
- 2 tsp Oregano
- 1 tsp Paprika
- 2 Bell peppers
- 1 Onion
- 4 Pita bread
- 2 tsp Salt
Steps
- Cut the chicken into even 1.5-inch cubes — uniform pieces cook at the same rate, so nobody gets a raw center or a dry edge.
- Whisk the olive oil, lemon juice, minced garlic, oregano, paprika, and salt into a marinade. Coat the chicken and rest at least 30 minutes, or up to 4 hours in the fridge.
- Cut the peppers and onion into chunks roughly the same size as the chicken. Thread everything onto skewers, alternating chicken with vegetables.
- Grill over medium-high heat 10 to 12 minutes, turning every 3 minutes, until the chicken is charred at the edges and reads 165°F inside.
- Rest the skewers 5 minutes — the juices redistribute instead of running out on the first cut.
- Slide the meat and vegetables off onto warm pita and squeeze fresh lemon over everything before serving.
