Ingredients
- 2 tbsp Coffee
- 2 tsp Sugar
- 1 cup Water
- 0.25 tsp Cardamom
Steps
- Use coffee ground to a fine powder — finer than espresso, almost like cocoa. Coarse grounds make a muddy, bitter cup.
- Combine the water, coffee, sugar, and cardamom in a cezve (small copper pot) and stir to combine. Then do not stir again — the foam depends on it.
- Heat over low heat, watching closely. As it warms, a dark foam will rise. Just before it boils, spoon the foam into the cups.
- Return to the heat and let it rise once more, then pour carefully along the side of each cup to preserve the foam cap.
- Rest 1 minute so the grounds settle, then sip slowly. The grounds at the bottom are for fortune-telling, not drinking — stop when the texture turns silty.
