Ingredients
- 1 lb Puff pastry
- 12 oz Quince paste
- 1/2 cup Sugar
- 1/4 cup Water
- 3 cups Vegetable oil
Steps
- Cut the pastry into squares and the quince paste into cubes — one cube per pastelito.
- Pinch two squares together around the filling, pressing the edges to seal and pinching the corners up into little ears.
- Fry at 350°F until puffed and golden, about 3 minutes per side.
- Brush the hot pastelitos with a sugar-water glaze so they shine; serve warm on May 25th or any day that needs one.
- Pastelitos are best the day they are fried; if you must keep them, rewarm in a hot oven 5 minutes.
