Charcoal-Style Beef Kofta
Ground beef does the heavy lifting here, with onion rounding it out. A Middle Eastern dinner that takes 30 minutes, start to finish. Each serving lands at 470 calories with 44g of protein, so it eats like a much heavier meal. Simple enough for a Tuesday, good enough to serve to guests — that is the whole idea.

Ingredients
- 1.5 lb Ground beef
- 1 Onion
- 1/2 cup Parsley
- 3 cloves Garlic
- 2 tsp Baharat
- 1 tsp Cumin
- 1 tbsp Olive oil
Steps
- Grate the onion and squeeze it completely dry in a towel — wet onion is the number one kofta killer.
- Mix the beef with the dry onion, chopped parsley, garlic, baharat, cumin, and 2 teaspoons of salt, just until combined; overworking makes them dense.
- Wet your hands and mold into 8 fat logs around skewers, or into oblong patties.
- Chill 15 minutes so they hold together over the heat.
- Grill or broil 4 minutes per side, until charred outside and just blushing inside.
- Rest 5 minutes, then serve with lemon and extra parsley.
