Ingredients
- 8 small Zucchini
- 1 lb Ground beef
- 1/2 cup Rice
- 2 cups Tomato sauce
- 1/2 Onion
- 3 cloves Garlic
- 2 tbsp Mint
- 1 tsp Allspice
- 1 tbsp Olive oil
Steps
- Hollow each zucchini with an apple corer or small spoon, leaving 1/4-inch walls — go slow; the first one always breaks.
- Mix the beef, rinsed rice, grated onion, garlic, mint, allspice, and salt.
- Stuff loosely, only three-quarters full — the rice swells and will burst tight squash.
- Nestle seam-up in a wide pot and pour the tomato sauce around, not over, with 1 cup of water.
- Simmer covered 45 minutes, until the squash yields to a fork and the rice is tender.
- Rest 10 minutes in the pot; the sauce thickens as it stands.
