Ingredients
- 8 oz Pitted dates
- 1 tsp Baking soda
- 1.5 cups All-purpose flour
- 0.5 cup Butter
- 1 cup Brown sugar
- 2 Eggs
- 1 cup Heavy cream
- 1 pint Vanilla ice cream
Steps
- Simmer the chopped dates in 1.25 cups water with the baking soda for 5 minutes, then mash to a rough purée. The dates dissolve into the batter and keep it impossibly moist.
- Cream the butter and half the brown sugar, beat in the eggs, then fold in the flour and the date purée. Pour into a buttered baking dish.
- Bake at 350°F for 30 to 35 minutes until springy. While it bakes, simmer the remaining sugar, butter, and cream into a toffee sauce — 5 minutes, until it coats a spoon.
- Poke the hot pudding all over with a skewer and pour over half the toffee sauce so it soaks in. This is the “sticky” part.
- Serve warm squares with ice cream and the remaining sauce poured over at the table. Arguably Britain’s greatest dessert; certainly its most comforting.
