Ingredients
- 4 Pork sausages
- 6 slices Back bacon
- 4 Eggs
- 1 cup Baked beans
- 2 Tomatoes
- 8 oz Mushrooms
- 4 slices White bread
- 3 tbsp Butter
Steps
- Start with the sausages in a cold skillet over medium heat — starting cold lets the fat render slowly so they cook through without splitting. Turn until browned, about 15 minutes.
- Push the sausages aside, add the bacon, and fry 2 to 3 minutes per side. Then the halved tomatoes and mushrooms, cut-side down, until softened and charred at the edges.
- Warm the beans in a small saucepan. Fry the eggs in butter to your liking — fried is traditional, though scrambled and poached have their partisans.
- Toast the bread in the bacon fat if you’re committed to authenticity, or in the toaster if you’re committed to your arteries’ feelings.
- Plate everything together with the beans in their own little pool — never touching the eggs, according to the purists. Brown sauce or ketchup on the side, strong tea mandatory.
