Ingredients
- 3 cups Shredded coconut
- 2 cups Sugar
- 1 cup Water
- 0.5 cup Condensed milk
- 1 tbsp Butter
- 0.25 tsp Salt
Steps
- Simmer the sugar and water for 5 minutes into a light syrup — you want it just starting to thicken, not caramelized.
- Stir in the coconut, condensed milk, butter, and salt. The mixture will look loose at first; keep stirring.
- Cook over medium heat, stirring constantly, 12 to 15 minutes, until very thick and the mixture pulls away from the pot in a mass.
- Drop spoonfuls onto a buttered baking sheet, shaping them into rough mounds. Work quickly — cocada sets fast as it cools.
- Cool completely until firm and chewy. The edges should be lightly golden and crisp, the centers tender.
- Store airtight for up to a week. For cocada cremosa, stop cooking 3 minutes earlier and serve it soft in little cups.
