- 3 cups Flour
- 1 cup Water
- 0.25 cup Vegetable oil
- 2 tbsp Vodka

- 3 cups Vegetable oil
Steps
- Mix the flour, water, oil, vodka, and salt into a smooth dough and knead 8 minutes until silky. The vodka evaporates in the fryer, leaving shattering crispness — it is the street vendor’s secret.
- Rest the dough 30 minutes, then roll paper-thin; you should almost see through it. Thin dough blisters; thick dough goes leathery.
- Brown the beef with chopped onion and salt, then fold in chopped olives and chopped hard-boiled eggs. Cool the filling completely — hot filling melts the dough.
- Cut the dough into rectangles, fill one half, fold over, and seal the edges firmly with a fork. Press out air pockets so they do not explode in the oil.
- Fry at 375°F, one or two at a time, 2 to 3 minutes until blistered and golden. They puff like little pillows.
