- 12 oz Soaked saltfish (cod)
- 1.5 cups All-purpose flour
- 1 tsp Baking powder
- 1 Egg
- 1 cup Black-eyed peas
- 3 Scallions
- 0.5 Scotch bonnet pepper
- 4 cups Vegetable oil
Steps
- Soak and boil the salt cod, then flake it fine. Mash half the black-eyed peas roughly — they add body and a nutty flavor to the batter.
- Mix the flour, baking powder, egg, and water into a thick batter, then fold in the fish, peas, sliced scallions, and minced Scotch bonnet.
