Ingredients
- 2 lb Ground pork
- 3 tbsp Red curry paste
- 3 stalks Lemongrass
- 8 Kaffir lime leaves
- 2 oz Galangal
- 1 tsp Turmeric
- 1 tbsp Fish sauce
- 4 feet Pork casings
Steps
- Pound the lemongrass, galangal, lime leaves, and turmeric to a fragrant paste; mix with the curry paste.
- Work the paste thoroughly into the pork with fish sauce — the farce should be sticky and homogeneous.
- Stuff into rinsed casings, twisting into 6-inch links; prick any air bubbles.
- Grill over medium heat 20 minutes, turning often, until deeply browned and firm — low and slow renders the fat without bursting the skins.
- Rest 5 minutes so the juices settle.
- Slice on the bias and serve with sticky rice and fresh vegetables; sai ua is northern Thailand’s beloved sausage, herbal and fiery.
