Ingredients

Steps

  1. Stir the mayo, mustard, relish, vinegar, and a pinch of paprika into the copycat secret sauce; chill it — cold sauce on a hot burger is the whole trick.
  2. Divide the beef into 8 thin patties, 2 oz each, and season hard with salt and pepper; thin patties get the lacy, crispy edges.
  3. Sear in a ripping-hot cast iron skillet 2 minutes per side, melting a cheese slice onto 4 of them in the last 30 seconds.
  4. Toast the bun crowns, heels, and the extra middle slice (the club layer) cut-side down in the beef fat until golden.
  5. Build: heel, sauce, onion, lettuce, pickle, cheese patty, middle bun, sauce, onion, lettuce, pickle, plain patty, crown.
  6. Wrap 2 minutes in foil — the steam melds everything the way the cardboard box does.
