Ingredients
- 12 oz Chicken breast
- 1/2 cup Buttermilk
- 1 tbsp Hot sauce
- 3/4 cup Panko breadcrumbs
- 1/4 cup All-purpose flour
- 1 tbsp Cajun seasoning
- 2 Brioche buns
- 12 Dill pickle chips
- 2 tbsp Light mayonnaise
- 1/2 tsp Garlic powder
- 1 tsp Smoked paprika
Steps
- Pound the chicken to an even 3/4-inch so it cooks through before the crust burns — even thickness is the whole secret.
- Soak in buttermilk and hot sauce at least 30 minutes; the acid tenderizes without turning it mushy.
- Mix panko, flour, cajun seasoning, paprika, and garlic powder; press the coating on hard so it clings like armor.
- Air-fry at 400°F for 12 minutes, flipping once — a light oil spritz gives you that drive-thru crunch without the vat.
- Toast the buns cut-side down in the hot basket for 2 minutes while the chicken rests; warm, crisp bread matters.
- Sauce both buns with garlic-light mayo, stack pickles on the bottom, crown with chicken, and press down once before the first bite.
