Ingredients
- 2 cups Egg whites
- 3/4 cup Low-fat cottage cheese
- 1/2 cup Monterey jack
- 1/2 cup Roasted red peppers
- 1 cup Spinach
- 2 Green onions
- 1/2 tsp Salt
- 1 tsp Hot sauce
Steps
- Heat the oven to 300°F and set a kettle to boil; low heat and steam are what keep these custardy instead of rubbery.
- Blend egg whites, cottage cheese, jack, and salt until completely smooth — silk in, silk out.
- Divide peppers, spinach, and green onion among the cups of a silicone muffin tray; the fillings sink otherwise.
- Pour the blend over, set the tray in a roasting pan, and add boiling water halfway up the sides. The water bath is non-negotiable.
- Bake 25 minutes until just set with a slight jiggle in the center; they firm up as they cool.
- Cool 10 minutes, pop them out, and refrigerate; they reheat in 30 seconds and beat the drive-thru line every time.
