  1. Set your oven to its hottest setting — 500°F or more — with a pizza stone or inverted baking sheet inside for at least 30 minutes. Manoushe wants violent heat to puff and blister like a proper flatbread.
  2. Stir the za’atar into the olive oil to make a loose, spoonable paste. This is the topping, the seasoning, and the sauce all in one.
  3. Divide the dough into 4 balls and roll each into a 7-inch round on a floured surface. Dock the centers with a fork so the topping stays put.
  4. Spread each round generously with the za’atar paste, leaving a small border bare. Do not skimp — a pale manoushe is a sad manoushe.
  5. Bake one at a time on the hot stone, 4 to 5 minutes, until the edges puff and the topping sizzles.
  6. Serve hot with sliced tomatoes, cucumber, olives, and fresh mint. Roll it up around the vegetables and eat with your hands — that is how it is done.
