Ingredients

Steps

  1. Cook the bacon in a cold cast-iron skillet over medium heat until crisp at the edges, about 8 minutes; drain it on a rack, not paper towels, so it stays snappy.
  2. Divide the beef into four loose 3-oz balls — Five Guys patties start as balls, and loose meat sears into a better crust than a packed puck.
  3. Sear the balls in the bacon fat, smashing once with a stiff spatula; season with salt and pepper and leave them alone for 2 minutes.
  4. Flip, drape cheese over two of the patties, stack a plain patty on each, then cross two bacon slices over the top.
  5. Toast the sesame buns cut-side down in the same pan until golden at the rim.
  6. Mayo on both buns, then lettuce, tomato, pickles, and onion — the full all-the-way pile, no holding back.
  7. Crown it, wrap in foil for 2 minutes so the bun steams soft, and eat it over the wrapper like you mean it.
