Ingredients
- 3/4 lb Lean ground beef (90/10)
- 2 Potato buns
- 2 slices American cheese
- 3 tbsp Light mayo
- 1 tbsp Ketchup
- 1 tsp Yellow mustard
- 1 tsp Dill pickle brine
- 1/4 tsp Garlic powder
- 1/4 tsp Paprika
- 1 cup Shredded lettuce
- 4 slices Tomato
Steps
- Mash the mayo, ketchup, mustard, pickle brine, garlic powder, and paprika into ShackSauce; chill — cold sauce is non-negotiable.
- Smash 3-oz beef balls flat on a screaming-hot griddle; season hard and do not touch for 90 seconds.
- Flip once, cheese immediately, 60 more seconds — smash burgers cook in minutes, not tens of minutes.
- Toast the potato buns in the beef fat until the edges crisp.
- Sauce both crowns and heels, then lettuce, tomato, cheesy patty, crown.
- Eat over the plate; the juices are the point.
