Ingredients

Steps

  1. Pull the membrane off the bone side of the rack — slide a butter knife under it at one end, grip with a paper towel, and rip; it comes off in one satisfying sheet.
  2. Rub the ribs all over with the sugar and spice mix, wrap tight in foil, and bake at 275°F for 2 and a half hours — low and slow is non-negotiable for fall-off-the-bone.
  3. Stir the liquid smoke into the BBQ sauce; it fakes the smoker so convincingly nobody at your table will know.
  4. Unwrap, brush the ribs with sauce, and broil 4 minutes per side until the sauce lacquers and chars at the edges — watch it, because sugary sauce goes from caramelized to carbonized fast.
  5. Rest 10 minutes, then cut between the bones and serve with the extra warm sauce; resting keeps the juices in the meat instead of on the board.
