Copycat Chicken Queso Burrito Bowl (Qdoba’s style)
This is the kind of American lunch you’ll make on repeat — chicken thighs (boneless) and adobo seasoning, 40 minutes, big payoff. It is weeknight cooking that still hits your targets — 42 grams of protein per serving. No specialty equipment and nothing hard to find at a regular grocery store.

Ingredients
- 1.25 lb Chicken thighs (boneless)
- 1 tbsp Adobo seasoning
- 1 cup Long-grain rice
- 2 tbsp Lime juice
- 1/2 cup Cilantro
- 1 can Black beans
- 1 cup Greek yogurt (2%)
- 3 oz Sharp cheddar
- 1 cup Pico de gallo
- 1 cup Corn
- 2 cups Romaine
Steps
- Season the chicken thighs with adobo and sear 6 minutes per side, then rest and chop — thighs stay juicy in a bowl in a way breasts never do.
- Cook the rice, then fold in lime juice and cilantro while it is steaming hot so the herbs perfume every grain.
- Warm the yogurt gently with the shredded cheddar until just melted, stirring constantly — yank it off the heat the second it turns silky, because yogurt queso splits if it boils.
- Warm the beans and char the corn in a dry skillet until it pops and blackens in spots; charred corn tastes like the restaurant’s roasted salsa met the grill.
- Build the bowls: rice, beans, chicken, corn, pico, lettuce, then a confident drizzle of queso — bowl order matters, because queso on top stays melty longest.
