Ingredients
- 1 lb Dried red kidney beans
- 12 oz Andouille sausage
- 1 Yellow onion
- 1 Bell pepper
- 2 ribs Celery
- 5 cloves Garlic
- 2 Bay leaves
- 1 tbsp Cajun seasoning
- 1 tsp Smoked paprika
- 6 cups Cooked rice
- 4 Scallions
Steps
- Soak the beans overnight in plenty of cold water, then drain. This shortens the cook and keeps the skins intact.
- Brown the sliced andouille in a heavy pot over medium heat, about 6 minutes, then add the onion, bell pepper, celery, and garlic; cook 8 minutes until soft.
- Add the beans, bay leaves, Cajun seasoning, paprika, and 8 cups of water. Bring to a boil, then simmer gently 90 minutes, stirring occasionally.
- When the beans are creamy, mash a ladleful against the side of the pot and stir it back in. That is how the pot gets its body without any thickener.
- Simmer 15 minutes more, pick out the bay leaves, and serve in bowls over rice with scallions on top. Better on day two.
