- 2 lb Crawfish tails
- 1 lb Fettuccine
- 4 tbsp Butter
- 1 Yellow onion
- 1 Bell pepper
- 4 cloves Garlic
- 3 tbsp Flour
- 2 cups Half-and-half
- 3/4 cup Parmesan
- 1 tbsp Cajun seasoning
- 1/4 cup Parsley
Steps
- Boil the fettuccine in well-salted water until just shy of al dente; reserve a cup of pasta water before draining.
- Soften the onion, bell pepper, and garlic in butter for 7 minutes. Stir in the flour and Cajun seasoning; cook 2 minutes.
- Whisk in the half-and-half gradually and simmer 5 minutes until the sauce thickly coats a spoon. Stir in the Parmesan until melted.
