Ingredients
- 2 cups Pecan halves
- 1.5 cups Brown sugar
- 1/2 cup Granulated sugar
- 3/4 cup Heavy cream
- 4 tbsp Butter
- 1 tsp Vanilla
- 1/4 tsp Salt
Steps
- Toast the pecans at 350°F for 8 minutes until fragrant; keep them warm in the turned-off oven. Warm nuts keep the candy from seizing.
- Combine both sugars, cream, butter, and salt in a heavy pot. Cook over medium heat, stirring, until it reaches 238°F on a candy thermometer, about 12 minutes.
- Off the heat, stir in the vanilla and pecans, then beat with a wooden spoon 2 to 3 minutes until the mixture thickens and loses its gloss.
- Working fast, drop spoonfuls onto parchment. If the candy sets in the pot, warm it 30 seconds to loosen.
- Cool completely until firm and matte. Store airtight with parchment between layers; humidity is the enemy.
