Tasso and White Bean Soup

Ingredients
- 1 lb Dried great northern beans
- 12 oz Tasso ham
- 1 Yellow onion
- 2 ribs Celery
- 2 Carrots
- 5 cloves Garlic
- 8 cups Chicken stock
- 2 Bay leaves
- 1 tsp Thyme
- 1 tsp Cajun seasoning
- 4 cups Kale
Steps
- Soak the beans overnight and drain. Dice the tasso — it is intensely smoky, so a little seasons the whole pot.
- Brown the tasso in a heavy pot 6 minutes to render its fat, then add the onion, celery, carrots, and garlic; cook 8 minutes.
- Add the beans, stock, bay leaves, thyme, and Cajun seasoning. Simmer 50 minutes until the beans are creamy-tender.
- Mash a cup of beans against the pot wall and stir back in for body. Add the chopped kale and simmer 10 minutes until wilted.
- Discard the bay leaves, taste for salt — the tasso brings plenty — and serve with crusty bread.
