Ingredients
- 2 lb Whole sea bass
- 0.33 cup Ketchup
- 0.25 cup Rice vinegar
- 0.25 cup Sugar
- 1 cup Pineapple chunks
- 2 Bell peppers
- 0.5 cup Cornstarch
- 1 tbsp Light soy sauce
- 3 cloves Garlic
- 1 tbsp Fresh ginger
Steps
- Score the fish in a crosshatch, pat very dry, and dust with cornstarch. Fry in 350-degree oil 6 minutes per side until deep golden and crisp; drain upright.
- Stir-fry the peppers, pineapple, garlic, and ginger 2 minutes — they should stay bright and crunchy.
- Add the ketchup, vinegar, sugar, soy, and 1/2 cup of water; simmer 3 minutes until the sauce turns glossy and coats the vegetables.
- Set the fish on a platter and pour the sauce over so it crackles against the crisp skin.
- Serve immediately with rice. The sauce should hit sweet first, then sour — never the other way around.
