Ingredients
- 1.25 lb Italian sausage
- 3 Bell peppers
- 1 Onion
- 1 cup Polenta
- 1 cup Marinara sauce
- 2 tbsp Olive oil
- 1/4 cup Basil
Steps
- Slice the peppers and onion into thick strips so they hold up to a long simmer.
- Brown the sausages in olive oil in a large skillet, about 4 minutes per side, until well colored.
- Add the peppers and onion to the pan; cook 10 minutes, stirring occasionally, until soft and sweet at the edges.
- Pour in the marinara, cover, and simmer 10 minutes until the sausages are cooked through.
- Meanwhile, bring 4 cups of salted water to a rolling boil and whisk in the polenta in a slow stream to avoid lumps.
- Reduce to low and stir often for 20 minutes, until thick enough that the spoon leaves a trail.
- Spoon the polenta into wide bowls.
- Top with the sausage, peppers, and pan sauce; tear the basil over everything.
