Ingredients
- 2 lb Tilapia fillets
- 2 Red onions
- 3 tbsp Berbere
- 1/4 cup Niter kibbeh
- 4 cloves Garlic
- 1 tbsp Ginger
- 2 tbsp Tomato paste
- 2 cups Fish stock
- 2 tbsp Lemon juice
- 1/4 cup Cilantro
Steps
- Dry-cook the minced onions 10 minutes until golden. Add the niter kibbeh, berbere, garlic, and ginger; cook 3 minutes until brick-red.
- Stir in the tomato paste and stock; simmer 15 minutes into a rich, spicy broth.
- Nestle the fish fillets into the simmering sauce, spooning sauce over the top. Poach gently 8 to 10 minutes until the fish flakes.
- Do not stir aggressively — the fillets should stay in proud pieces.
- Finish with lemon juice and cilantro; serve on injera. Friday fasting tables across Ethiopia look like this.
